The 2005 growing season was mostly cooler than average, which allowed the grapes to hang longer on the vines without causing the sugar levels to rise too high too quickly. This allowed the fruit to fully mature yet keep its crisp acidity, which is the structure for balanced, age-worthy wines. The grapes were harvested late in the season due to good weather. Aging in both new and used oak barrels adds a dimension and richness to the natural flavors from the grapes. Mendocino County has warm days like Napa Valley and Sonoma County, but cooler nights, which accentuates the delicate flavor nuances in the grapes, as well as promoting a refreshing crispness. Tasting NotesOur Stone Creek 2005 Cabernet Sauvignon, Mendocino County, has rich flavors of blackberry, dark cherry, dark chocolate, and a hint of fresh green herbs and blueberry on the finish. Smooth, it has a velvety texture. Drink now through 2009. Pairing SuggestionsThis Cabernet Sauvignon will be delicious with dishes such as meatloaf, sausages, barbecue tri-tip, smoked pork ribs, or grilled Portobello mushrooms.
